RECIPE: Breakfast Casserole

  • 24 oz frozen shredded potatoes
  • 12 eggs
  • 2 cups half & half
  • 1 tsp season salt
  • 1-1/2 cups pepper jack cheese, grated 
  • 2 cups chopped ham (or preferred meat like sausage)
  • 2 green onions, sliced


  1. Grease a 9 x 13 baking dish. Add the frozen shredded potatoes. Sprinkle with salt and pepper. 
  2. In a large bowl whisk the eggs, then add half and half, season salt, cheddar cheese, pepper jack cheese and chopped ham. Pour over top of the potatoes. 
  3. Cover with foil and refrigerate 2 hours or overnight. 
  4. Bake covered in foil at 350° for 90 minutes. Let rest 10 minutes before serving. Top with green onions and serve.
