RECIPE: Breakfast Casserole

Ingredients:
- 24 oz frozen shredded potatoes
- 12 eggs
- 2 cups half & half
- 1 tsp season salt
- 1-1/2 cups pepper jack cheese, grated
- 2 cups chopped ham (or preferred meat like sausage)
- 2 green onions, sliced
Instructions:
- Grease a 9 x 13 baking dish. Add the frozen shredded potatoes. Sprinkle with salt and pepper.
- In a large bowl whisk the eggs, then add half and half, season salt, cheddar cheese, pepper jack cheese and chopped ham. Pour over top of the potatoes.
- Cover with foil and refrigerate 2 hours or overnight.
- Bake covered in foil at 350° for 90 minutes. Let rest 10 minutes before serving. Top with green onions and serve.
